Eating with purpose starts with understanding the role you want food to play in your life. In the United States, we often place more emphasis on how fast we can eat something, to get back to whatever it is we were doing before our stomach's growled.
In Europe, this behavior is the inverse. As a child, one of our co-founders, Caroline, spent her summers in Europe - specifically in the Mediterrannean, both Italy and Greece, going for months at a time, becoming fully immersed in the lifestyle and culture.
The pace of life was different for her there- Slower. They took time to eat every dinner together as a family, dinners that often lasted for hours as a time to slow down and connect, soaking up conversation, and relishing in each bite. The food was always fresh, local, and homemade: fruit, wild caught fish, vegetables, nuts, olives, capers, sun dried tomatoes, local cheeses, jams, marinades, homemade breads and pastries- but this wan't just a dinner occasion.
Snacks were the same- real food, with real ingredients, shared at a table, or alone with a cup of espresso in a porcelain- not on the run, but as purposeful way to slow down, relax and allow yourself a minute to refocus.
